Salads shouldn’t be boring! that’s why I came up with a super antioxidant kale salad. I know the texture of kale is something you may need to get use to, especially if you’re not a salad fan, but I promise you once you’ve tried this recipe you won’t look back.
Kale has so many wonderful nutrients, it is renowned for it’s detoxing properties ridding the body of unwanted excess toxins. Not only does this salad detox your body but it contains important antioxidant properties from the goji berries and pomegranate.
I decided to make a pomegranate vinaigrette since it’s one of the most antioxidant-rich fruits in the world. It protects your body from free-radical damage important in reducing the risk of cancer whilst keeping you youthful. It’s quick and easy to make with most of the ingredients already in your kitchen cupboard. The flavour is sweet with a little tangy twist from the apple cider vinegar (ACV) which suppresses your appetite and increase fat loss.
To balance it out I thought hey!, I should add an extra source of protein so I threw in some hemp seeds ….that’s right, hemp seeds are a fantastic vegan-friendly source containing 10g protein per 30g.
The flaxseeds A.K.A Linseeds add extra fibre along with omega 3 and the pumpkin seeds add a great crunch and flavour whilst improving your immune system due to it’s naturally high zinc content.
So do you see why this salad is so SUPER and why you may like to try it. Especially now that we are coming into winter our bodies need a little extra defence.

SUPER ANTIOXIDANT KALE SALAD
4 Cups of chopped Organic Kale
3 medium organic rainbow carrots shredded( I used purple, yellow and orange)
1 cup of pomegranate seeds
1 medium spring onion
2 tablespoons of hemp seeds
2 tablespoons of pumpkin seeds
1/3 cup of dried cranberries
2 tablespoons of milled flaxseeds
1 cup of 100% pomegranate juice
1/2 teaspoon of raw honey
pinch of sea salt
2 teaspoon of apple cider vinegar
1 teaspoon of extra virgin olive oil
1-For the dressing combine pomegranate juice, apple cider vinegar, olive oil, raw honey and salt. Whisk until all ingredients are combined.
2-Wash all the salad ingredients and chop into bite-size pieces
3-place into a bowl and toss with the vinaigrette and allow to sit for 15 minutes before serving
